King Island Black – Double Brie

This traditional Double Brie gains its rich, creamy profile from the island’s milk and the generous addition of King Island cream.

Hand stirring allows the cheesemakers to feel the firmness of the curd, ensuring it is stirred to perfect firmness and texture. Added gently to the hoops, it is salted before heading to the maturing room, where it is checked and turned every two days.

Before long brevi flora mould begins to grow on the surface of the cheese and it is hand-rubbed every couple of days. When ready, it is wrapped in fine paper allowing it to breathe without drying out.

King Island Dairy Black Double Brie comes in smaller 1kg wheels; this is significant as it allows development of an intense flavour profile. From its earthy aroma to its glossy, luscious interior this cheese packs a punch. Enjoy its smooth, creamy texture and secondary mushroom flavour. As the cheese ages, the mushroom characters become more pronounced taking on an earthy, porcini mushroom intensity.
