Named after the site of the dairy, Loorana Brie is handcrafted in the traditional Brie de Meaux style and size.
Loorana is hand cut and stirred allowing the cheesemaker to feel the firmness of the curd, ensuring it has perfect firmness and texture. It then heads to the maturing room where it is checked and turned every two days. Its golden exterior comes about by a delicate process where the cheesemaker rubs the brie by hand with brevi to remove the virgin blooms of the white mould. This allows the more delicate brevi flora to develop before the bloom reappears. It is released to market only after the carefully trained eye of the cheesemaker determines that it is the perfect texture and that the unique Loorana flavour will improve with age.
Because this double brie is made in a traditional size 2.5kg wheel, its ratio of brevi flora mould to cheese creates a soft, oozing cheese with intense savoury aroma. As with all white mould cheeses, it ripens from the outside in resulting in a complex flavour with a delicately soft and velvety interior. When it is young it is more savoury but as it matures the brevi flora accentuates its earthy notes and provides a more intense flavour.
