King Island Dairy Soft White Cheese Products
Soft white cheese is surface ripened, ageing from the exterior to the interior through a process that enhances the character of the cheese. When ripe, the centre of a soft white cheese should have a delightful creamy texture and ooze or bulge when cut. The exterior coating will have a velvety white rind.
Soft white cheeses include:
- Brie - has a creamy flavour and rich mushroom characters that are more pronounced than camembert. Traditionally brie was made in 3kg wheels. Today, however, it is available in a variety of sizes.
- Double Brie - made with added cream and higher butter fat producing a creamier, fuller, nutty flavour.
- Triple Cream Brie - made with full fat milk and added cream resulting in a very rich flavour.
- Camembert - made using different bacteria, less moisture and lower butter fat producing a milder flavour than brie. Traditionally camembert was made in smaller sizes than brie.
