Serves: 6 as an accompaniment
This polenta will perfectly complement barbequed quail or chicken.
Ingredients:
- 1 litre light chicken stock
- 1 cup cornmeal or polenta
- 100g baby spinach leaves
- 2 tblspns Australian Pure Cream
- 200g King Island Dairy Bass Strait Blue Cheese, crumbled
- salt and freshly ground black pepper, to taste
Method:
- 1. Bring stock to the boil in a large heavy based saucepan. Whisk in cornmeal and reduce heat to a simmer. Continue stirring for one minute to prevent lumps forming.
- 2. Simmer cornmeal for 10 -15 minutes or until grains have softened, stirring often.
- 3. Add spinach and cream and stir well to combine. Once spinach has wilted, remove from heat and stir in crumbled blue cheese, salt and pepper.
- 4. Serve immediately.
