King Island Dairy Bass Strait Blue, Sweet Potato and Spinach Frittata

Ingredients:

  • 20g butter
  • 1 large red onion, chopped
  • 500g or 2 medium sweet potatoes, peeled and diced
  • 150g baby spinach leaves
  • 100g King Island Dairy Bass Strait Blue, crumbled
  • 7 eggs, lightly beaten
  • 1/3 cup King Island Dairy Créme Fraiche or Pure Cream
  • freshly ground black pepper, to taste
  • green salad to serve

Method:

  • 1. Melt butter in a non-stick 26cm frying pan. Add onions and potatoes. Cook, covered, over a medium heat for 8-10 minutes, stirring occasionally, until potatoes are just tender.
  • 2. Add spinach and stir until wilted. Top with crumbled King Island Dairy Bass Strait Blue.
  • 3. Combine remaining ingredients and pour over potato mixture. Cover pan with lid or foil and cook over a low heat for 20-25 minutes until frittata is set in the middle.
  • 4. Cut into wedges to serve with a green salad.
