Ingredients: - 20g butter
- 1 large red onion, chopped
- 500g or 2 medium sweet potatoes, peeled and diced
- 150g baby spinach leaves
- 100g King Island Dairy Bass Strait Blue, crumbled
- 7 eggs, lightly beaten
- 1/3 cup King Island Dairy Créme Fraiche or Pure Cream
- freshly ground black pepper, to taste
- green salad to serve
Method: - 1. Melt butter in a non-stick 26cm frying pan. Add onions and potatoes. Cook, covered, over a medium heat for 8-10 minutes, stirring occasionally, until potatoes are just tender.
- 2. Add spinach and stir until wilted. Top with crumbled King Island Dairy Bass Strait Blue.
- 3. Combine remaining ingredients and pour over potato mixture. Cover pan with lid or foil and cook over a low heat for 20-25 minutes until frittata is set in the middle.
- 4. Cut into wedges to serve with a green salad.
