Seeds of 1 vanilla bean or 1 teaspoon vanilla bourbon essence
Method:
1. Cut four of the figs into quarters and place on half of a foil lined baking tray. Roughly chop the remaining figs and place on the other half of the tray.
2. Sprinkle figs with brown sugar and place under a hot grill until sugar has caramelised and figs are tender. Allow to cool and reserve the brown sugar.
3. Beat the egg yolks and sugar with an electric beater until the mixture is very pale and thick.
4. Fold in King Island Yoghurt, King Island Pure Cream, vanilla and the roughly chopped caramelized figs.
5. Pour into a plastic wrapped lined 20cm x 11cm loaf pan and freeze until firm.
6. Serve slices of semifreddo with caramelized fig quarters and drizzle with reserved caramel sugar syrup.
