Caramelised Fig and Yoghurt Semi Freddo

Serves: 4

Ingredients:

  • 8 fresh figs, cut into quarters
  • 1/2 cup lightly packed brown sugar
  • 2 egg yolks
  • 1/2 cup caster sugar
  • 400g King Island Dairy Creamy Indulgent yoghurt
  • 150ml King Island Pure Cream
  • Seeds of 1 vanilla bean or 1 teaspoon vanilla bourbon essence

Method:

  • 1. Cut four of the figs into quarters and place on half of a foil lined baking tray. Roughly chop the remaining figs and place on the other half of the tray.
  • 2. Sprinkle figs with brown sugar and place under a hot grill until sugar has caramelised and figs are tender. Allow to cool and reserve the brown sugar.
  • 3. Beat the egg yolks and sugar with an electric beater until the mixture is very pale and thick.
  • 4. Fold in King Island Yoghurt, King Island Pure Cream, vanilla and the roughly chopped caramelized figs.
  • 5. Pour into a plastic wrapped lined 20cm x 11cm loaf pan and freeze until firm.
  • 6. Serve slices of semifreddo with caramelized fig quarters and drizzle with reserved caramel sugar syrup.
