Ingredients:
- 425mL King Island Dairy Pure Cream
- 8 tblspn water
- 70gms castor sugar
- 3 egg yolks
- 2 tpsn vanilla essence
- 2 tblspn milk
Method:
- 1. Beat egg yolks until mousse like. Add vanilla.
- 2. Dissolve sugar in water over low heat, when dissolved, boil to the 'thread', ie: test syrup by running fingers under cold water and dipping into a teaspoon of the syrup, when threads form after separating thumb and forefinger, remove from heat. Cool for one minute. Gradually whisk in syrup mixture to mousse, keep whisking until mixture is thick and creamy.
- 3. Stand to cool, whisking occasionally. Lightly whip King Island Dairy Pure Cream and milk.
- 4. Fold into mousse - refrigerate. When half frozen, whisk mixture again - refrigerate.
