Layered Honey and Cinnamon Yoghurt Cup

Serves: 1

Ingredients:

  • 1 tblspn caster sugar
  • 2 tblspns water
  • 1 red plum, stoned and cut into wedges
  • 1 cluster (25g) muscatels, removed from stem
  • 3 (25g) coconut or almond macaroon biscuits, roughly crushed
  • 1/2 cup King Island Honey and Cinnamon Yoghurt
  • 1/2 cinnamon stick, broken into shards, to garnish

Method:
Combine sugar and water in a saucepan until sugar has dissolved. Bring to boil, add plum and muscatels and simmer over low heat until plum is tender. Cool. Layer one-third of the fruit mixture, coconut macaroon and King Island Honey and Cinnamon Yoghurt into a large serving glass. Repeat layers twice more and garnish with shards of cinnamon stick. Serve.
