Serves: 4 Ingredients: - 300mL King Island Dairy Pure Cream
- 45gms butter
- 4 small leeks
- 125gms feta
- 45gms butter (extra)
- 3 eggs
- 8 sheets filo pastry
- 1 clove garlic
- Salt & pepper
Method: - 1. Slice leeks thinly, wash thoroughly and dry off.
- 2. Lightly beat eggs. In pan melt, 45gms butter, add leeks and crushed garlic. Cook slowly for five minutes or until leeks are tender. Remove from heat.
- 3. Add feta (crumbled into small pieces) and King Island Dairy Pure Cream to leek mixture, fold in lightly beaten eggs, season with salt and pepper, mix well.
- 4. Brush 8 sheets of filo pastry with 45gms of melted butter, place in pie dish, trim off filo pastry 2cm above pie dish side. Bake in moderate oven for 30 minutes or until golden brown.
