Drunken Figs will keep for 1 week in an airtight container in a cool cupboard.
Ingredients:
- 375g dried figs, washed in hot water
- 1/2 cup sugar
- 2 1/4 cups port
- 250g sorj or pita bread, cut into long narrow triangles
- 250g King Island Dairy Stormy washed rind cheese
Method:
- 1. Place washed figs in two cups water and bring to the boil. Simmer for five minutes. Remove and stand for 15 minutes. Drain well.
- 2. Combine sugar and port in a saucepan and bring to the boil over medium heat, stirring until sugar has dissolved.
- 3. Add drained figs and return to the boil. Reduce heat and simmer for 1 1/2 hours, stirring occasionally, or until figs are plump and syrup is thick and viscous.
- 4. Transfer figs to a heatproof bowl and allow to cool.
