Whisky Cream Syllabub

Serves: 4 - 6

Ingredients:

  • 600mL King Island Dairy Pure Cream
  • 2 tblspn castor sugar
  • Good dash of whisky
  • Juice of one lemon

Method:

  • 1. Dissolve the sugar in the whisky and lemon juice until you have a delicious whisky-flavoured syrup.
  • 2. Allow to cool. Whip the cream until thick and frothy, and carefully stir in the syrup. Do not use electric beaters.
  • 3. Serve with warm poached pears or pour into small pots or glasses and refrigerate before serving.
