King Island Dairy Food Service Division

King Island Dairy has a strong commitment to Food Service and offers unique products of the highest quality.

Exclusive to King Island Dairy is the most premium of all King Island Dairy cheeses, the Black Label Range. Handcrafted by King Island Dairy's master cheese maker, the Black Label range is only released from the island at its most optimum quality. Also within the Food Service division of King Island Dairy is the unique Discovery range and number of other products which have been specifically developed for the Food Service customer.

King Island Dairy Black Label Range

King Island Black is the artisan range, made by hand under the tutelage of our Head Cheesemaker, Ueli Berger. It is focused on the finest King Island Dairy styles offering only five cheeses; Loorana Brie, Double Brie, Triple Cream Blue, Cloth Wrapped Cheddar and Black Wax Cheddar.

Each of these indulgent cheeses is hand-crafted using traditional cheese making techniques, a unique mix of cultures and attention to detail that influences the signature flavour for each King Island Black cheese.

The King Island Dairy Black range is only available to fine food retailers, restaurants and hotels.

 


KID Black Label Loorana Double Brie

Black Label Loorana Double Brie

Named after the site of the dairy, Loorana Brie is handcrafted in the traditional Brie de Meaux style and size, creating a soft oozing cheese with intense savoury aroma.

As with all white mould cheeses it ripens from the outside, resulting in a soft and velvety interior. It is released to market only after the carefully trained eye of the cheesemaker determines that it is the perfect texture and that the Loorana flavour will improve with age.

KID Black Label Double Brie

Black Label Double Brie

This traditional Double Brie gains its rich, creamy profile from the island's milk and the generous addition of King Island cream. Made in smaller 1kg wheels the King Island Dairy Double Brie develops an intense flavour profile and with a smooth, creamy texture. From its earthy aroma to its glossy, luscious interior this cheese packs a punch.

Black Label Double Brie was named Champion White Mould Cheese at the 2011 Australian Grand Dairy Awards.

KID Black Label Blue Triple Cream

Black Label Blue Triple Cream

A blue brie style, Blue Triple Cream can thank the addition of generous lashings of King Island cream for its rich texture.

This cheese has a dense buttery centre; on the front palate it is rich and creamy with its blue mould providing a lingering sharpness on the finish. Each cheese carefully cared for until it is perfectly blue and creamy then wrapped in a traditional straw liner to protect the structure of the cheese and its surface mould.

KID Black Label Black Wax Cheddar

Black Label Black Wax Cheddar

Made in the spring when rich milk is in abundance, this cheddar uses a special blend of four cultures created exclusively by the cheesemaking team.

After one year of maturation the cheddar is checked, with only the finest examples set aside for another year's maturation to become King Island Dairy Black Wax Cheddar. It is a rich, savoury cheddar with a slight fruitiness and a big, sharp, full flavoured bite. It's crumbly texture is the sign of a great cheddar.

KID Black Label Cloth Matured Cheddar

Black Label Cloth Matured Cheddar

The distinctive orange and white mould on this cheddar's cloth is the fingerprint of each wheel.

King Island Dairy Black Cloth Wrapped Cheddar uses a special blend of four cultures created exclusively by the cheesemaking team and is matured in a controlled environment unique to King Island. In the finest tradition of English cheddar this is a firm, close textured cheese which, depending on its age, has a delicate to rich flavour.

Discovery Ash Blue

Discovery Ash Blue is a complex mix of flavours and textures. The hand-crafted cheese offers sweet mushroom aromas and a creamy richness. The unique ash coating provides delightful smoky overtones, while the mossy veins add a wonderful texture and subtle saltiness that gently bites through the rich body but does not dominate.

Discovery Ash Brie

Discovery Ash Brie has a creamy and slightly nutty character with a hint of mushroom aroma. The brie's rich golden paste maintains a firm texture while the texture of the rind and the smokiness of the ash coating adds an extra dimension to the flavour.

A soft surface ripened white mould cheese that has a rich nutty flavour that develops with age. White mould growing on the cut surface is an indication that the cheese is alive and maturing.

Phoques Cove Camembert

A soft surface ripened white mould cheese with a smooth texture and interior that is yellow in colour and has a rich, slightly nutty flavour. A milder and firmer cheese than the Brie.

KID Seal Bay Triple Cream Cheese

Seal Bay Triple Cream Cheese

A rich and creamy triple cream cheese made with fresh King Island milk enriched with pure cream. Made to a Brie style the cheese is enveloped by a bloom of white mould. It has a rich golden centre with a creamy, slightly nutty flavour.

KID Stormy Washed Rind

Stormy Washed Rind - (NEW)

Made in the Pont l'Evêque style from Normandy France, this traditional washed rind cheese has an earthy and wild aroma. It has a soft and mild interior, though with a surprisingly subtle flavour. The cheese must be brushed and washed regularly with a linen culture during maturation to encourage the special bacteria to grow on the rind. This gives the cheese its unique flavour.

A delicately distinctive cheese, with a textured white mould and rich creamy centre. The mild blue mould gradually matures developing a more spicy flavour with age. It is an ideal cheese for first time blue eaters due to its mild flavour.

A full flavoured open textured cheddar with a crumbly consistency. Matured for a minimum of 12 months, the cheese has a rich flavour and a good bite.

KID Yoghurt

Yoghurt

A naturally sweetened, rich and creamy, thick yoghurt which has the added benefit of acidophilus. It contains no preservatives or thickeners. Available in Vanilla Bean and Honey Cinnamon. Serve on its own, as an accompaniment with your favourite fruit or dessert or add to recipes.
