Black Label Loorana Double Brie
Named after the location of the King Island Dairy, Loorana is the first product to be released under the King Island Dairy Black Label range in 7 years and is crafted in a traditional Brie De Meaux style. Once the first growth of white mould develops on the surface of the cheese, it is hand-rubbed to allow a more delicate Brevi flora to develop creating a “rusty” speckled surface. The sheer size of the 2.5 kg cheese wheel helps to ensure that Loorana becomes a voluptuous and oozing Black Label Brie.

Black Label Double Brie
The addition of King Island Pure cream creates the indulgent flavour and delectable creamy centre of Black Label Double Brie. A Brevi linen is hand brushed onto the surface to create a mottled orange rind to provide an intense secondary flavour and an aroma similar to that of a washed rind. Its glossy interior becomes more inviting as it matures for 4 to 6 weeks. Black Label Double Brie was named Champion cheese at the 2006 Australian Grand Dairy Awards 2006.

Black Label Blue Triple Cream
A unique triple cream that has a full growth of blue mould on the exterior to create a wonderful texture. It is hand pierced to develop gentle blue mould through its rich and buttery interior. The cheese is wrapped in straw to protect the outer mould as it develops and allows for ease of handling. Appealing on all palates due to the subtle yet characterful flavours.

Black Label Black Wax Cheddar
Selected from the best cheddars in the dairy and aged for a minimum 24 months. Black Wax Cheddar is a rich, full flavoured cheddar with a slight fruitiness and a big, sharp, full flavoured bite. The longer it matures the more crumbly it becomes.

Black Label Cloth Matured Cheddar
A small truckle style cheddar that is mild, sweet and nutty with a richness of flavour and a buttery aftertaste without being overpowering. Traditionally matured for a minimum 12 months, the cheese is then wrapped in cloth and matured again for a minimum six weeks to give unique flavour and character combined with a farmhouse appearance. Drying from the outside in, with time it becomes more buttery and fuller in flavour.

Discovery Ash Blue
Discovery Ash Blue is a complex mix of flavours and textures. The hand-crafted cheese offers sweet mushroom aromas and a creamy richness. The unique ash coating provides delightful smoky overtones, while the mossy veins add a wonderful texture and subtle saltiness that gently bites through the rich body but does not dominate.

Discovery Ash Brie has a creamy and slightly nutty character with a hint of mushroom aroma. The brie's rich golden paste maintains a firm texture while the texture of the rind and the smokiness of the ash coating adds an extra dimension to the flavour.

Discovery Hot Waxed Blue
Discovery Hot Waxed Blue is a creamy blue cheese with a sweet and salty character and a hint of fruitiness. This hand-crafted cheese is matured for five weeks before being dipped in hot wax to seal in the flavour and then matured again for up to another three weeks.

Discovery Scrubbed Brie
Discovery Scrubbed Brie is a full-flavoured creamy Brie with a delightful buttery mushroom character. Hand-crafted using traditional French cheese making techniques, the Brie is coated in Brevi linens and then scrubbed by hand to create its distinctive earthy aroma.

Discovery Blue Cheddar reveals a soft waxy texture with a sweet nutty flavour and a mild blue character. It has a vibrant orange/red colour interspersed with cracks of blue vein.

Stormy Washed Rind - (NEW)
Made in the Pont l'Evêque style from Normandy France, this traditional washed rind cheese has an earthy and wild aroma. It has a soft and mild interior, though with a surprisingly subtle flavour. The cheese must be brushed and washed regularly with a linen culture during maturation to encourage the special bacteria to grow on the rind. This gives the cheese its unique flavour.

Yellow Rock Red Leicester Style
Made to the Red Leicester style, it is a delicately flavoured cheese, matured for a minimum six months and becoming sweeter with age. A slight suggestion of green grass bitterness, behind more distinctive butterscotch and nutty flavours. The orange appearance is derived from extracts of the Annatto bean.

Yoghurt
A naturally sweetened, rich and creamy, thick yoghurt which has the added benefit of acidophilus. It contains no preservatives or thickeners. Available in Vanilla Bean, Honey Cinnamon and Creamy Indulgent. Serve on its own, as an accompaniment with your favourite fruit or dessert or add to recipes.

Pure Cream
A naturally thick pasteurised pure cream containing no preservatives, additives or thickeners. Consistency will vary from season to season depending on the quality of feed at the time.

Crème Fraiche
A lightly cultured sour cream. Naturally thick with a lactic acid producing bacteria added to give a slightly soured, nutty flavour ideal for cooking, as it does not separate.
