Blue Vein

- Mostly has a strong tangy flavour, a pungent aroma and a smooth and creamy texture
- Blue vein cheese is distinguished by a network of blue-green veins of mould
- Veins are created during production when the cheese is 'spiked' or 'pierced' to allow oxygen in, which promotes the growth of the blue mould
Our famous blue cheese products includes blue brie, roaring forties and the Bass Strait blue varieties.
