Chicken and Camembert Croissants with Cranberry Apple Relish

- 1 green apple
- ½ cup cranberry sauce
- 2 teaspoons seeded mustard
- sea salt and freshly ground black pepper, to taste
- 200g King Island Dairy Phoques Cove Camembert
- ½ roast chicken
- 6 croissants
- curly lettuce leaves, for garnish
Grate the apple, avoiding the seeds, and mix together with the cranberry sauce and mustard. Season to taste. Cut the King Island Dairy Phoques Cove Camembert into thin slices. Remove the meat from the chicken and slice or shred finely. Carefully make a cut into the thick side of each croissant and open out. Spread with Cranberry Apple Relish. Fill with chicken and camembert slices. Bake at 200°C for 5 minutes until cheese just starts to soften. Insert a little curly lettuce and a dollop of relish into each croissant before serving.
Note: These croissants can also be assembled and served without being heated.
