Fig, Prosciutto and Triple Cream Brie Bruschetta

- warmed honey, for brushing
- 6 slices baguette, cut diagonally
- olive oil spray
- sea salt and freshly ground black pepper, to taste
- 12 thin slices prosciutto
- 3-4 ripe fresh figs, sliced
- 200g piece King Island Dairy Seal Bay Triple Cream Brie (cut from the log)
Remove King Island Dairy Seal Bay Triple Cream Brie from refrigerator and allow to come to room temperature. Spray baguette slices on both sides with olive oil and season with salt and pepper. Grill on both sides until lightly toasted. Cut Seal Bay Triple Cream Brie into six slices. Place baguette toasts onto individual serving plates, top each with two slices of prosciutto, Triple Cream Brie, figs and brush figs with honey. Sprinkle with pepper and serve as an entrée.
