Cheddar Cheese Style and Making History The origin of cheddar comes from 'cheddaring', a cheese making method that originated in the village of Cheddar in Somerset, England during the 12th Century. Cheddar cheese making was introduced to Australia by the early settlers. Today, it is the most popular cheese in the country. Characteristics Cheddar is a firm close textured cheese which, depending on its age, has a delicate to rich flavour. The many flavour variations of cheddar reflect different cheese making methods and the length of maturation. For example, aged cheddar crumbles in the mouth and has a long lingering flavour whereas mild cheddar will slice well for use in sandwiches. Cheddar cheese is available wrapped in wax or cloth or cut from the block and vacuum packed.
When selecting a cheddar look for a crumbly cheese that is free from dryness or cracks in the surface. The cheddar should have a lingering taste. Store your cheddar wrapped loosely in plastic. Cheddar and cheddar style cheese can keep for up to several months due to its low moisture content. The longer the cheese is aged, the more flavour it will develop. It is however important to note the 'best before' date of a cheddar as the shelf life will vary depending on the age of the cheese when purchased.
